Ravensworth - Riesling Ancestral 2021
Region: Murrumbateman & Others
Fresh and zesty, almost cider-like ancestral method Riesling comprising of a blend of estate fruit (Murrumbateman), and fruit sourced from surrounding vineyard areas. Well made, as is always the case with Ravensworth. Enjoy now as a crisp aperitif or lie it down to develop it with some time.
The fruit saw a little skin contact and then was pressed straight into ceramic eggs and left to its own devices (and, as Bryan tells us, encouraged with positive thoughts but no undue influence). When it had about 10 g/l of fermentable sugar still present the wine was bottled and left to find its own sparkle. The yeast sediment is still there and will change the wine as it ages. Right now its fresh and zesty, almost cider-like, but these lees will add more flavour over time.
