I was taught to make kimchi by my grandmother. Every region in Korea makes kimchi differently & now I use Australian grown gochugaru (chilli powder) and locally made organic plum syrup to make something special and unique.
These are blended with dashi, salted krill, 2 different types of fish sauce and garlic to create a deep & complex flavour. Like with any kimchi though the most important ingredients are patience & time!
**Kimchi is a live fermented product, please make sure to put into the fridge as soon as possible. As it ages it will be still safe to eat but flavour may be affected and will change over time.
