Energetic and organic red/white blend with a good dose of carbonic maceration dialling up the vibrancy. There's dark fruits and herbs on the nose and that carries through to the palate with juicy plum finishing in a stiff brambly lick of tannin. The Semillon in the mix adds a lift in body and acidity and keeps it fresh enough for the fridge.
80% Merlot topped up with 20% Semillon from an organically farmed vineyard in Vine vale, East of the Barossa. Vines grown on deep sand over red clay that benefit from the cool night air coming down from the Eden Valley Ridge. Both varieties have been hand picked and whole bunch tipped into a stainless steel tank to undergo a carbonic maceration for one week. After that week the fermentation kickstarted and the ferment had three days of foot stomping, once a day, to extract some colour, aromatics, and to break down the carbonic effect. Pressed in a horizontal bag press and finish the fermentation in stainless before going to old seasoned French barrique and demi muid for élevage over winter. Bottled without any additions.
