Domaine Courbet - Savagnin l'Origine 2018
A new wine for us here at the Nick House, from rising young star Damien Courbet. Crisp and mineral core with plenty of flavour and depth packed on top. Notes of orange, marzipan and orchard fruits with plenty of complexity from the partial sous-voile aging (under flor, like in Marco de Jerez).
Domaine Courbet was founded in 1896 and consists of just 7.5 hectares, half of which are in the prestigious Château Chalon appellation. Current custodian is Damien Courbet who began converting to Biodynamics soon after taking over from his father. He farms two parcels, one of which sits just under the cliff of Chateau Chalon. While young, Damien is already making a name for himself as a producer to watch.
Tank fermented and aged in two parts in old barrel for two years, one of which is under flor (sous-voile).
