Deboutbertin - Pacotille Chenin Blanc 2017
Grapes: Chenin Blanc
Mad keen bicyclists Stéphanie and Vincent began this project in 2012 when they decided that they had had enough of city life and decided to move to Faye d'Anjou in the Loire Valley.
They work in a natural way without the use of pesticides, herbicides or chemical fertilizers in the vineyard or manipulation in the cellar, instead focusing on careful vineyard work and non-intervention during vinification.
The grapes are sorted in the parcels, harvested by hand and transported in small perforated crates and vertical pressed over a period of 24 hours. The Chenin juice is poured directly into old barrel for fementing, without racking. Nothing is added and juice is moved only with gravity. The resulting wine is rested for 12 months on lees on older barrels for 12 months before bottling. No additions.
