A Pet Nat made from shiraz grapes grown on the Minim estate vineyard in Metcalfe, dry grown on granite and farmed with organic practices. Good fruit weight, balanced with high natural acidity and the crunchy freshness brought by petillance. A luscious and bright drink for summer.
NOTES FOR NERDS
The fruit was picked a few weeks short of fully ripe and whole bunch pressed to stainless steel tanks for initial fermentation. All wild yeast, no additions or adjustments, unfiltered and bottled short of dry to promote further bottle fermentation. The wine rested on lees in bottle over winter and spent 3 weeks on the riddling racks before being hand disgorged in early Spring.
